Ham Pie Recipe
Pastry
3 c. Flour
1 c. Butter
pinch of salt
1 egg
4-5 T. Chilled white wine
Cut butter into flour. Add egg, salt and wine. Wrap and refrigerate for 1 hour. Divide into 2 balls. Roll into 12″ circles and place 1 into bottom of 10″ pie pan.
Filling
1-2 pkgs frozen spinach, defrosted and excess water squeezed out
4 T. Butter
2 onions, thinly sliced
1/3 c. Parmesan cheese, shredded
1/3 c. Heavy cream
Ham (original recipe didn’t give amount)
5-6 oz. fontina or Swiss cheese, sliced
1 egg, slightly beaten
Melt butter in large saute pan. Add onion and sauté until they are pale in color. Add spinach, parm cheese and cream. Mix to blend 1-2 minutes, let cool. Cover pastry with layer of ham, then sliced cheese, then spinach mixture, then ham, then cheese. Top with remaining dough. Brush with beaten egg and prick with fork 5-6 times.
Bake at 375 degrees for 40 minutes. Let stand 15-30 minutes before serving. Can be made 1-2 days ahead of time.

White Bean Pasta
1 can (16oz) white beans, drained
1/4 lb pasta (penne, rotini or similar)
2 T olive oil
1-2 teaspoons dried rosemary
1 onion, sliced thin
1 can (14.5oz) chicken stock
Warm oil in skillet and saute onion and rosemary until lightly browned. Meanwhile, cook pasta according to directions using chicken stock to replace part of the water. When pasta is half-way done, add beans to the water and cook until pasta is done.
Drain most of the water from the pasta/bean pot, leaving about 1/4 cup of liquid. Toss in onion and season with salt and pepper.

Go-To Recipe: Mediterranean Chicken
8 skinless boneless chicken breasts
1- 14oz can quartered artichoke hearts, drained
3/4 c. chopped pitted dates
1/4c. raisins
12 pimento stuffed green olives, halved
2 T packed brown sugar
2 T balsamic vinegar
3 minced garlic cloves
1 T dried basil
1 T drained capers
1 T olive oil
2 t dried oregano
1/2 t salt
1/4 t pepper
1/2 c. chicken broth
Combine everything but the chicken broth in a ziploc bag. Seal and turn to mix. Refridgerate overnight. Arrange chicken and marinade in a single layer in a roasting pan. Add chicken broth. Bake in a 350 degree oven until chicken is cooked, about 35-45 minutes.
