Layered Leeks and Potatoes (adapted from Better Homes and Gardens 365 Vegetarian Meals)
1 lb. potatoes , sliced 1/4 inch thick
2T. Olive Oil
3 c. Sliced Mushrooms
2/3 c. thinly sliced leeks
2 cloves garlic, minced
1/2t. dried rosemary
pinch salt
1/2 c. whipping cream
3/4 c. shredded Parmesan cheese
Preheat oven to 400F. Grease 1 1/2 qt casserole dish. In covered saucepan cook potatoes in boiling water for about 3 minutes. Drain.
In large skillet heat 1 T. oil over med. heat. Add mushrooms, leeks, garlic, rosemary and salt. Cook until leeks are tender. Stir in cream and bring to a boil. Reduce heat and gently boil for about 30 seconds.
Arrange 1 cup potatoes on bottom of casserole dish. Spoon 1/3 leek mixture over potatoes. Sprinkle with 1/4 cup of cheese. Repeat layers. Top with remaining potatoes, and leek mixture. drizzle with 1 T oil.
Bake, uncovered for 30 m inutes. Sprinkle with 1/4 c remaining cheese and bake for another 5-10 minutes .Cover and let stand 10 minutes before serving.
